Extending the range of enzymatic catalysis by using non-aqueous media considerably enlarges the range of enzyme applications and became a po werful approach in biochemistry and biotechnology. This book discusses several specific applications in nearly anhydrous media, aqueous-orga nic co-solvent mixtures and reverse micelles, including use of enzymes in fat and oil processing, peptide synthesis, sugar transformations a nd preparation of chiral compounds. A particularly promising approach of using reverse micelles for modifying proteins is also described.
