There are numerous elements in the life of the Jews of Kaifeng that would bear research. This book deals with just one aspect - namely their Jewish religious observance. This research will show that there is a source in the Rabbinical literature for almost all of the activities which the Jews of Kaifeng considered to be Jewish practice.
