As milk is a product of paramount importance in the diet, the global population is increasingly demanding high quality and food safety standards. In view of this, it is essential for both industries and producers to increasingly produce a high-quality product that complies with the limits set by current legislation. This study surveyed the quality of milk in the Missões region of Rio Grande do Sul in different aspects. However, it is suggested that strict hygiene practices should be adopted throughout the milking process, with the aim of obtaining safer milk of a higher quality than that currently found.
