The search for novel, high quality and cheap sources of protein and energy has been a principal endeavor in most developing countries. Food legumes, commonly known as pulses find an important place in diets of millions of people as they are good source of protein and act as an essential supplement for the cereal based meals. Rice bean, a less known pulse is grown in different parts of the world. The nutritional profile of rice bean is very high, which is mainly attributed to the high content of proteins, essential amino acids vitamins and minerals.Despite the nutritional potential of the crop the usage of pulse in routine cuisine is limited due to the presence of some anti-nutritional factors, which limits the wider acceptability and utilization of this legume. In order to encourage rice bean consumption, present study was conducted to evaluate different rice bean germplasm and screening the most promising germplasm for seed, consumption and crop improvement purposes. This work also focuses on common processing techniques for reduction of these anti-nutrients from seeds.
