Cachaça ist das brasilianische Getränk, besser bekannt als Samba und Fußball. Nach Bier ist es das am zweithäufigsten konsumierte alkoholische Getränk der Brasilianer. Bei der Herstellung unterscheidet man zwischen handwerklich hergestelltem Cachaça (aus einer Brennerei) und industriellem Cachaça (in Kolonnen gebrannt). Ziel der Studie war es, die Qualität dieser Cachaças durch physiko-chemische Analysen wie flüchtige Säure, Alkoholgehalt, pH-Wert, Kupfer, höhere Alkohole, Aldehyde, Ester, Furfural und Methanol zu bewerten.

La cachaça est la boisson brésilienne, plus connue que la samba et le football. C'est la deuxième boisson alcoolisée la plus consommée par les Brésiliens, juste après la bière. La production se divise en deux catégories : la cachaça artisanale (issue d'un alambic) et la cachaça industrielle (distillée en colonne). L'objectif de l'étude était d'évaluer la qualité de ces cachaça par le biais d'analyses physico-chimiques telles que l'acidité volatile, le titre alcoométrique, le pH, le cuivre, les alcools supérieurs, les aldéhydes, les esters, le furfural et le méthanol.

Cachaça is the Brazilian drink, better known than samba and soccer. It is the second most consumed alcoholic drink by Brazilians, second only to beer. Production is divided into artisanal cachaça (from a still) and industrial cachaça (column distilled). The aim of the study was to assess the quality of these cachaças through physico-chemical analyses, such as volatile acidity, alcoholic strength, pH, copper, higher alcohols, aldehydes, esters, furfural and methanol.
