En Angola, les produits laitiers occupent une place importante dans les habitudes alimentaires de la population. L'objectif de cette étude était de caractériser les indicateurs physico-chimiques des produits laitiers fabriqués dans le secteur industriel angolais. Elle a été réalisée entre février 2013 et octobre 2015. Le processus d'élaboration des produits a été suivi et les paramètres physico-chimiques tels que le pH, l'acidité, l'énergie, l'humidité, la matière grasse, les protéines et les cendres du yaourt, du fromage et du beurre ont été déterminés.

Ziel dieser Studie war es, die physikalisch-chemischen Indikatoren von Milcherzeugnissen zu charakterisieren, die im industriellen Sektor Angolas hergestellt werden. Sie wurde zwischen Februar 2013 und Oktober 2015 durchgeführt. Der Herstellungsprozess der Produkte wurde überwacht und die physikalisch-chemischen Parameter wie pH-Wert, Säuregehalt, Energie, Feuchtigkeit, Fett, Eiweiß und Asche von Joghurt, Käse und Butter wurden bestimmt.

In Angola, dairy products play a prominent role in people's eating habits. The aim of this study was to characterize the physical and chemical indicators of dairy products produced in Angola's industrial sector. It was carried out between February 2013 and October 2015. The process of making the products was monitored and the physicochemical parameters such as pH, acidity, energy, humidity, fat, protein and ash of yogurt, cheese and butter were determined.
