Many methods have been investigated for isolation and purification of lysozyme form chicken egg white. Most of them are based on chromatographic techniques i.e. a metal affinity chromatography or ion exchange chromatography. The principle limitation of these methods is that chromatography is an expensive technique and the yields obtained do no justify commercialization. Ethanol is an economical and environmentally friendly liquid fuel. This research deals with application of encapsulation technology to ferment the dextrose sugar to ethanol. With a view to minimize process costs while maintaining a satisfactory ethanol yield, yeast cells for free cells and immobilized cells were tested for their fermentation abilities.
