The main aim to this investigation was to produce healthy liquid smoke from some agricultural wastes. Moreover, the research discuss the effect of liquid smoke on some fish meat products as fish fillets and fish balls. The results indicated that liquid smoke which produced were safe to use because its contain phenolic compounds which acts as preserving agent. Also, The polycyclic aromatic hydrocarbons in liquid smoke which produced from some agricultural wastes were in safe limit.
