The idea for this book came from living in Connemara for three years. It's a wild and rugged and beautiful place and I became a complete convert of the glorious seafood from Galway Bay. In the course of writing this book I went oyster farming with a dear friend of mine in the middle of January. It was cold and very, very wet. As soon as the water sloshed over the tops of our wellies and trickled down the insides we were knew we were doomed to be cold and wet. But the location was glorious and they were the best oysters I have ever tasted. It was like I'd dropped off the edge of the world.
