I have spent years trying to find the perfect meals to cook that will taste good, satisfy my boys, keep my husband happy (he is an avid cyclist and a health nut) and help me to stay on track with my own dieting goals. The recipes in this book are all easy to prepare, they use healthy ingredients and you can freeze or refrigerate them for later consumption. I try to plan out my week each Sunday but that never seems to work out. These recipes give me a change to get ahead of myself and have a few extra meals standing by for lunch or dinner when needed.
