Nikolai Burlakoff is a writer whose long-standing interest in cultural studies and cooking finds expression in this work devoted to a central dish of Kalmyk life-dzhomba, Kalmyk tea. His most recent book, The World of Russian Borsch (2013), was well-received by readers, culinary historians, and cookbook authors.
