Celiac disease (CD) is an autoimmune enteropathy caused by gluten intolerance, the treatment of which is based on a lifelong gluten-free diet (GFD). Although conceptually simple, the application of a GFD remains difficult, exposing patients to poor compliance and imbalances in nutritional intake. The aim of our work was to assess the prevalence of non-adherence to the GFD, and of non-specific dietary errors (NDEs) in celiac patients, to detect the respective predictive factors of occurrence, and to investigate the short-term effects of therapeutic nutrition education (TNE) on GFD adherence and on the occurrence of NDEs in celiac patients.
