Traditional plants are rich sources of bioactive compounds with health-promoting activities. In this work twenty plants with different organs such as seeds, leaves, flowers, buds ... etc. were studied in terms of phenolic compounds content, antioxidant, antibacterial and anticancer properties. The extraction was done using ethanol 80% with assist of ultrasonic and by distilled water with assist of microwave. These plants were shown to possess various beneficial effects such as antiseptic, antimicrobial, anticancer and antioxidative properties. To avoid the dangerous effect of the ordinary used synthetic antioxidants in food, developed methods of extraction were employed among to improve the production, detection, separation and characterization of natural bioactive compounds and to obtain detailed information about different plant extracts that could be potentially used in order to use them as safe additives in foods and pharmaceuticals.
